The cold fronts are moving in and out, but the fish are still biting! Hop on your new Robalo boat and cast the rod to get one of the most plentiful fish in the lowcountry – redfish! These can be cooked several different ways from stuffed tacos to being grilled with crabmeat – you can’t go wrong! Today we’re dishing out a spicy kick to our redfish by grilling it with buffalo sauce! Let’s get started.
INGREDIENTS:
– 4 redfish fillets
– 2 tablespoons unsalted butter, melted
– 1/3 cup buffalo wing sauce
– 1 teaspoon barbecue seasoning
– 1 teaspoon minced garlic
INSTRUCTIONS:
1. Preheat grill.
2. Melt the butter. Coat the fish with it and the barbecue seasoning while the grill is preheating.
3. Place the redfish fillets on the grill for about 3-4 minutes on each side or until the fish separates easily. *time varies depending on thickness of fillet and heat of grill*
4. Combine the wing sauce and garlic in a bowl while the fish is cooking.
5. Transfer the fillets to a heat-proof platter and brush wing sauce/garlic combo over the fish.
6. Serve and ENJOY!
