Winter and early spring are always phenomenal offshore fishing times, especially for our chosen species. South Carolina should honestly be a top wahoo destination! Today on Reel Good Recipes, we’re teaching you how to cook Seared Wahoo with Mango Salsa! Feel free to use any white or medium colored fish if you’re not into wahoo. Let’s get cooking!
INGREDIENTS:
Mango Salsa:
– 2 1/2 cups mango chunks
– 1/2 medium red onion, diced
– 2-3 green onions, diced
– 1/2 cilantro, chopped
– 1 medium red bell pepper, diced
– 1 jalapeno, diced
– 1 lime, juiced
– 1 lemon, juiced
– 1/2 tsp sea salt
Seared Wahoo:
– 4 wahoo fillets
– 2 tbsp avocado oil
– sea salt + pepper
INSTRUCTIONS:
Mango Salsa:
1. Combine all ingredients into a bowl and mix
2. Chill for 1 hour to allow flavors to meld together
Seared Wahoo:
1. Dry the fillets
2. Salt and pepper both sides
3. Heat avocado oil in a skillet over medium heat
4. Add fillets and cook for 4 minutes, then flip and cook for another 4 minutes until done
5. Top with mango salsa and ENJOY!
